Dwell SWISS DINNER PARTY: How To Make Raclette If you’ve been reading our blog for a while now, you probably know we love anything Swiss – from the travels (Klosters, St Moritz, Gstaad, Montreaux), the fondue, and most recently – raclette! Our wonderful brother-in-law introduced us to raclette when were were skiing in Whistler and stumbled upon the cutest restaurant (Crepe Montagne) serving the dish. Raclette is similar to fondue in that it includes lots of cheese and a special machine, but it is an entirely different meal! We love cooking this meal at home on cozy nights when it’s freezing outside! Raclette (taken from the french word “racler” meaning to scrape) is prepared on a grill-like machine with small trays below where the cheese melts. Once the cheese is nice and bubbly, you remove the trays from the machine and scrape it onto potatoes – YUM! Below is our list of suggestions on how to have a great and traditional raclette dinner party. INGREDIENTS Raclette cheese (1/2 lb per person) Fingerling potatoes (red new potatoes work too) Cauliflower – This is not traditional, but if you want it to be slightly healthier, we found substituting cauliflower for potatoes is delicious Vegetables – Whatever you prefer, but we typically choose green peppers, mushrooms, green beans, asparagus, onions Gherkins and pickled onions (Maille brand) MEATS: We typically go light on the meats, but here are our suggestions: *A typical grocery store will sell these items and we typically order on a #1 slice width* Prosciutto (2 to 3 slices per person) Mortadella (2 slices per person) Ham (2 to 3 slices per person) Salami (3 to 4 per person) Cappocolo spicy (3 to 4 per person) Lastly, we suggest serving it with a light salad and white wine. Reactivate it to view this content. 3.) Grill your vegetables and meat on top of the grill, while your cheese melts in the trays below 4.) When the cheese is bubbly and melted, remove the trays 5.) Pour the melted cheese over your potatoes (or cauliflower) and enjoy! Trust us, this meal is absolutely delicious! Plus it’s unique and entertaining for all of your guests.
